Bolgheri Bianco Donna Olimpia 1898 2021
Donna Olimpia's Bolgheri Bianco wine is characterized by a long aging on the lees which gives the Vermentino structure, creaminess and also makes it long lasting. Two French grapes contribute to the blend: Viognier and Petit manseng; both add structure and ripe fruity flavors to the wine. It therefore stands out from the stereotype of young and fresh Vermentino, to take on an evolved white character of great charm. The grapes are grown on the Bolgheri estate, not far from the Tyrrhenian Sea. The vines have sandy and loamy soils and enjoy a mild climate and many hours of sunlight that favor the ripening of the grapes.
The harvest takes place in September when grapes are fully ripe. The grapes are pressed and the must is clarified by natural decantation. Then it ferments in stainless steel vats at a low temperature. Subsequently the wine ages in steel containers in contact with the fine lees for 14 months with repeated bâtonnage that keep the lees in suspension. It is then cold stabilized and bottled.
