Simčič
That of Marjan Simčič is a Collio winery located right on the border between Italy and Slovenia. Collio is a border wine region, part of the vineyards continue beyond the Italian border where the proper name is no longer Collio, but Brda. Well, the border line cuts the Simčič winery's vineyard in two: one part is in Italy (in the Collio) and a part in Slovenia (in the Brda).
The history of the Simčič winery began in 1860 and has developed thanks to the succession of 5 generations of the same family up to the present day. In all, the Simčič family's vineyards are 18 hectares, some even very old and located at different altitudes. The agronomic management is done in respect of nature according to traditional practices and according to the belief that only by following the natural rhythm of the plants can the best results be obtained. Neither fertilizers nor pesticides are used, but only natural fertilizer such as compost, humus and manure.
The only treatments that are applied are those based on copper and sulfur, which are also permitted by organic farming. In fact, the Simčič winery is in the process of converting to organic. In the cellar only proprietary grapes are processed, harvested in their own vineyards and fermentations are carried out only with spontaneous yeasts. This respectful approach to the environment also derives from the love for their land, which is the basis of Simčič's production philosophy.
The Collio is in fact in a privileged position: it enjoys the mild influence of the Adriatic Sea which is only 20 km away and is protected to the north by the mountains. Furthermore, the Collio has a unique souk, being a former seabed, rich in calcareous sediments stratified in a type of clayey rock called ponca. The production and aging of the wines are now carried out in a modern cellar completely underground, to ensure constant ideal temperature and humidity conditions throughout the year.
