Bibi Graetz

Bibi Graetz is a winemaker and is also an artist, the son of an Israeli sculptor, who in the 1960s bought the Castello di Vincigliata in the hills of Fiesole, north of Florence. His son, nicknamed Bibi, undertook art studies, but over time he became passionate about wine. Since 2000 he has been an illuminated and original wine producer in Tuscany based in the Castello di Vincigliata estate and has vineyards in different parts of the region. Among his vineyards Bibi Graetz boasts some very old plants, of which he is very proud. Thanks to these old vineyards he could enhance the native Tuscan varieties with which he produces some of his most famous labels such as Colore and Testamatta. In addition to the vineyards around Fiesole, he also owns vineyards in areas such as Maremma and Giglio Island. In particular on the island of Giglio he cultivates Ansonica and other native varieties in steep plots between rocks and granite sands.
Wine making could only be that of an artist: Bibi Graetz loves to experiment and treat his wines by hand, considered works of art. Fermentations are spontaneous, they also take place in open barriques with manual punching down. Wine ages both in barriques and old large barrels. Bibi Graetz's winery is certified organic and produces about 400,000 bottles a year.
