Aglianico dell'Antica Hirpinia is a wine that expresses the full potential of this ancient grape variety. It is a robust wine with well-integrated tannins and a lively acidity that gives it remarkable longevity. The Aglianico grapes are harvested by hand, selecting only the healthiest and ripest bunches. This operation, although laborious, preserves the integrity of the grapes and produces a high quality must. The must is fermented in steel, at a controlled temperature. This choice makes it possible to obtain a fresher and fruitier wine, while preserving the aromatic notes typical of Aglianico. Some producers may also use small amounts of wood for ageing, to give the wine more complexity and structure. During fermentation, the skins remain in contact with the must for a variable period, depending on the type of wine desired. A longer maceration gives the wine more tannins and colour, while a shorter maceration makes it lighter and more drinkable. After fermentation, the wine is aged in bottles or steel, depending on the style of the producer. Ageing in the bottle allows the wine to mature slowly and develop greater aromatic complexity. Once ready, the wine is bottled and left to rest in the cellar for several months before being marketed.
