Pavò’s Franciacorta Brut is its most classic product, produced in Iseo, in the territory of Franciacorta south of the lake. It has a very common style based on Chardonnay that gives elegance and finesse to the wine, but the use of oak creates a certain roundness and complexity.
The base wines are produced with alcoholic fermentation in steel and also carry out malolactic fermentation. They also age for a few months in steel and for 6 months in oak. After the second fermentation, the sparkling wine ages on the lees for 30 months before disgorging.
