Dolcetto d’Alba 2023
Dolcetto (meaning “sweetish” in Italian) is not a dessert wine, but a dry wine. The Dolcetto grape has this name because it is early to ripen, so its berries are the first of the season to become sweet. Moreover, being low in acidity, traditionally it was also used as a table grape. But the wine made with the Dolcetto grape is not sweet at all, on the contrary it is not only dry but also has a typical bitter almond aftertaste. The grapes of Odder’s Dolcetto d’Alba come half from the township of Castiglion Falletto and half from the township of La Morra.
The grapes are de-stemmed and crushed. They ferment with the skins in stainless steel vats at a controlled temperature. Total maceration lasts 12 days. After racking, the wine undergoes malolactic fermentation in steel vats and rests in steel for a few months before being bottled.
