Serraiola Vermentino is a DOC white wine produced by the winery of the same name in the Tuscan Maremma. It is made from 100% Vermentino grapes cultivated in vineyards located at approximately 250 metres above sea level on limestone-clay soils.
The Vermentino grapes are harvested by hand in late summer, when they reach perfect ripeness. The precise date of the harvest varies depending on the year and weather conditions. The grapes are gently pressed in order to extract the must, the liquid part rich in sugars and aromas. The must ferments in stainless steel at a controlled temperature. During fermentation, the sugars are transformed into alcohol and carbon dioxide. The Serraiola Vermentino ferments for about 10-15 days. After fermentation, the wine is matured on the fine lees for a variable period of 3 to 6 months. This process allows the wine to acquire greater complexity and harmony.
