With a bit of Pinot noir, Prosecco rosé turns into a food-friendly wine.
The novelty of the moment is Pink Prosecco! Prosecco Rosé is produced with the addition of red wine made with Pinot Noir grapes. In this way the sparkling wine, beyond taking on a pink hue, also acquires distinct smell and body. Furthermore, unlike traditional Prosecco, the rosé version is produced only in the vintage version, that is, with wines from the last harvest. It is proposed as a good level sparkling wine without losing the lively and easy character of Prosecco. The grapes of Bolla’s Prosecco Rosé come from an extended area between Veneto and Friuli-Venezia Giulia.
Glera and Pinot Noir grapes are vinified separately to obtain two types of base wine: one white and one red. The cuvée of the two wines is then created (85% white - 15% red) to which sugar and yeasts are added for the second fermentation in autoclave according to the tank method. The sparkling wine remains in contact with the lees for at least two months.
