The Chardonnay grapes are harvested by hand when they reach perfect ripeness, usually towards the end of August or the beginning of September.
The exact harvest date varies depending on the climate of the year. The grapes are gently pressed to extract the juice (must).
The must is then fermented at a controlled temperature in stainless steel. Fermentation usually lasts about 10 days.
After fermentation, the wine is aged in stainless steel for several months, typically 6 months. During this period, the wine develops its complexity and harmony.
Once the wine has reached its desired balance, it is filtered and bottled.
