Passerina 2023 Tenuta Ulisse
The Passerina grape is typical of the Adriatic coast, particularly widespread in the Marche and Abruzzo. It is an ancient, vigorous and productive variety. The name derives from the fact that its small berries are much loved by sparrows (“Passeri” in Italian) for their sweetness in the ripening period. The Passerina grapes of Tenuta Ulisse come from the first hills behind the coastal strip of Ortona in the province of Chieti; the vines have a clayey limestone soil. The wine expresses the typical fresh and fruity character of this grape variety.
After the harvest the grapes are immediately cooled and undergo a cryomaceration. They are then de-stemmed and pressed. The liquid must is clarified by cold decantation. Alcoholic fermentation takes place in stainless steel vats at a low temperature. The wine ages in steel until bottling.
