It is a wine that tells of the Maremma, with its minerality and freshness, a perfect example of how terroir can influence the taste of a wine. The precise composition of the blend may vary slightly from vintage to vintage, but in general it is a blend of red grapes typical of Tuscany, giving the wine a unique complexity and balance. Harvesting is manual. After selection, the grapes are destemmed and placed in 50 hl tanks. Alcoholic fermentation takes place over 8-10 days at a controlled temperature starting at 20-22°C for about 3 days, after which it increases to 25-27°C. The liquid after the end of alcoholic fermentation is separated from the skins and placed in another tank where malolactic fermentation will begin.
