The name “Crevoglio” refers to a particular conformation of the soil where the Chardonnay grapes destined for this wine grow. The soil is characterized by small cavities and fissures that allow excellent drainage and good aeration of the roots, positively influencing the characteristics of the final wine. The Chardonnay grapes, sourced from the Loazzolo vineyards, are harvested by hand at the end of September, when they reach optimal ripeness. A rigorous selection of the bunches follows to ensure only the best raw material. Soft Pressing: In the winery, the grapes are gently pressed to obtain the must. This is done slowly and with moderate pressure to avoid the extraction of vegetable components that could make the wine more bitter. Maturation: The wine is left to mature on the fine lees for several months, again in stainless steel. This aging allows the wine to gain complexity and structure, without excessively affecting the flavor profile. Bottling: At the end of winter, the Crevoglio is bottled and left to age further in the bottle for a few weeks before release.
