Caviot 2020 Barolo DOCG
A wine cultivated, using the guyot method, in the Piedmont Langhe, made from pure Nebbiolo, with grapes from several vineyards.
The grapes, carefully selected to create one of the flagship wines of this winery, are fermented for 15 days in tanks at a constant temperature, macerate for 10-15 days in submerged cap and finally mature for 24 months in large oak casks.
The end result is a wine with a strong and full-bodied taste but at the same time elegant, as only a Barolo can be, the tannins are velvety and perfectly integrated; a wine that has excellent ageing potential.
The term Caviot, from which this wine takes its name, is the nickname of Clemente, Beppe Caviola's father.
