refreshing wines that trigger a pleasant taste balance between opposites that alternate on the palate. The wine to pair with raw fish sushi is, first and foremost, a delicate, young white, still or sparkling such as Poggio alle Gazze by Ornellaia; among the spumante, blanc de blancs or low dosage ones are preferable, for example Champagne brut reserve by Cuperly. Of course, the situation becomes more complex when powerful condiments such as sauces and marinades are involved. If, for example, you like to dip your hosomaki into spicy wasabi, then avoid a pas dosé and opt instead for a still, smooth wine. Choose the best!
