La Combe Pilate by M. Chapoutier is made from pure Chasselas grapes.
The grapes are harvested by hand, at the optimal moment of ripeness. They are carefully selected and pressed whole and then undergo fermentation in stainless steel tanks, preserving the purity of the varietal character.
Maturation takes place on the lees in stainless steel tanks for 8-9 months, giving the wine depth and complexity.

Colour: pale golden yellow with greenish reflections.
perfume: delicate notes of white flowers with hints of citrus and lemon.
Taste: broad and fresh, balanced and savoury on the finish.
Suggestions
With an ageing potential of 2-3 years, Combe Pilat proves to be a great wine, ideal with dishes such as seafood risotto or scampi with mousseline sauce.
