LA GRAPPA
A GREAT SPIRIT WITH ITALIAN ORIGIN

Grappa is a grape-based distilled spirit from Italy, distilled from pomace and containing alcohol. Some Grappa are subjected to aging in wooden barrels, where they acquire greater complexity and take on a golden or amber colour. It is white, i.e. colourless, just like all distilled spirits and transparent when they come out of the still. So White Grappas are young grappas that have not been aged in wood, but simply diluted and filtered prior to bottling. For example, we suggestLa Grappa 903 Tipica by Nonaventura Maschio.
They only have the aromas deriving from the distillation of the pomace. If the pomace comes from an aromatic grape variety such as Muscat, Grappa giovane aromatica (young aromatic) is produced. We may suggest trying Grappa Il Moscato by Nonino.

Amber Grappa

Grappa takes on a golden or amber colour after being aged in barriques or oak casks. But this process does not only change the colour: the wood confers complexity and roundness to the grappa as well as a greater sensation of fullness of flavour. This will be more or less pronounced depending on how long it has been aged. It becomes Grappa Invecchiata after being aged in the wooden cask for 12 months, and Grappa Riserva (or Stravecchia) after more than 18 months.
