Grappa Il Moscato (with own box)
It belongs to the I Vigneti Monovitigno® line, that is grappas made by Nonino with the pomace of a single grape variety. Nonino was the first distiller to create grappa from a single grape variety: it was Grappa Nonino made from Picolit variety in 1973.
The fresh Moscato pomace from particularly suitable areas is fermented in steel vats under vacuum at a controlled temperature, in order to keep the pH under control and not to disperse flavor compounds. Pomace is immediately distilled to avoid the start of unwanted fermentations. The distillation is discontinuous in steam-heated copper stills.
The grappa rests at least 6 months in a large steel container before reducing the alcohol content and bottling.
