Vespa Bianco 2020 Bastianich Box da 6 bottiglie

Bastianich's Vespa Bianco is the result of a blend of three grape varieties: Chardonnay, Sauvignon Blanc and Picolit. The varieties ferment separately; 50% ferments in temperature-controlled stainless steel, the other 50% in 5 and 40 hectolitre oak barrels. 

Once fermentation is complete, a long period of batonnage and ageing begins, during which most of the yeasts are left. At the end of this phase, the wine is bottled and completes its refinement in the bottle.
