Sparkling Wine Brut Blanc de Noir Rio Cami
Casa Caterina's Rio Cami wine is an unusual blanc de noir for Italy, as Pinot meunier has never been introduced in large quantities in our country. It is not even contemplated among the varieties admitted in the Franciacorta production specifications. For this reason, the sparkling wine Rio Cami made with Pinot meunier in purity looks more like a Champagne than a Franciacorta. It has a soft and persuasive texture on the palate and a particularly fruity scent. The grapes are grown with biodynamic agriculture in the village of Monticelli Brusati and the vinification is very rigorous, as for all the wines of Casa Caterina, a truly artisanal and original producer.
The grapes are harvested by hand. The whole bunches are pressed to obtain a clear free-run must which is clarified by natural cold decanting. Then it ferments without adding selected yeasts. The second fermentation takes place in the bottle according to the traditional method and the sparkling wine ages in autolysis on the lees for 10 years. It is not dosed.
