Sparkling Wine Brut Blanc de Blancs Cremont
Cremont is a particularly advanced and exclusive traditional method sparkling wine. In fact it is produced in a very limited number of bottles that have remained in autolysis on the yeasts for 9 years. This gives the sparkling wine a rich and evolved taste, much loved by great fans of bubbles. It is a Traditional Method produced in the Franciacorta wine region with Chardonnay grapes, but it is not labeled as Franciacorta DOCG due to a choice of freedom from the Casa Caterina winery which rejects labels and fashions. Casa Caterina works with a biodynamic approach, does not use selected yeasts for the alcoholic fermentation of base wines and does not add either dosage or sulphites to its sparkling wines.
The grapes come from the village of Monticelli Brusati in the province of Brescia, on clayey and calcareous soil. They are harvested by hand and gently pressed. The must ferments in stainless steel vats with indigenous yeasts. The second fermentation takes place in the bottle with the traditional method and the sparkling wine ages in autolysis on the lees for 9 years. It is not dosed.
