Recioto della Valpolicella Classico 2020
Valpolicella’s historical wine is Recioto, that is a sweet wine obtained with grapes dried for a long time and then aged in wooden barrels. Recioto has a very long history, which deep its roots in the Middle Ages. The word Recioto refers to the external part of the bunch of grapes (called "rece", ears in Venetian dialect); in fact it was originally produced with these parts of the bunch containing the most sugary berries. Recioto della Valpolicella by Bolla comes from hillside vineyards in the classic area of Valpolicella, in particular in the township of Marano. The proximity of Lake Garda influences the climate with constant ventilation and diurnal temperature range.
After the manual harvest, the grapes are left to dry indoors until March. They are then crushed and fermented with maceration on the skins. Pumping over is carried out gently to facilitate the extraction of intact fruity flavors and silky tannins. Alcoholic fermentation is very slow due to the sugar concentration of the must and stops naturally leaving a high amount of residual sugar, so the wine is sweet. The wine ages for over a year in small oak barrels.
