Primitivo di Manduria Passo del Cardinale 2021
Primitivo di Manduria Passo del Cardinale comes from vineyards in the suitable area of Manduria, where soil is made of red sand and clay on a calcareous subsoil. The area overlooks the Ionian Sea from which it benefits from ventilation and cooling at night.
Primitivo plants are bush trained and have a very low yield, in favor of quality. The grapes are harvested by hand in the early hours of the day, before temperature rises and are taken to the cellar in small 5 kg boxes. Fermentation at a controlled temperature is followed by two weeks of maceration on the skins. In the end, the wine ages for 3 months in American oak barriques and 6 months in steel vat.
