Falanghina Antica Hirpinia is produced exclusively from Falanghina grapes, an indigenous grape variety of Campania, specifically Irpinia. This area, with its volcanic soils and ideal exposures, gives the wine a unique and distinctive character. Harvesting is done manually in the early hours of the morning to preserve the acidity and aromas of the grapes. The bunches of grapes are carefully selected to eliminate damaged or imperfect ones, then the grapes are gently crushed and destemmed to separate the bunches from the stems. Fermentation takes place without skin contact to obtain a fresh, fruity white wine. The temperature is kept low to preserve the delicate aromas. Part of the wine is matured in steel tanks to preserve freshness and minerality, another part can be matured in small wooden barrels to give the wine a slight complexity and spicy notes. Before bottling, the wine is refined in bottles to harmonise the aromas and flavours.er to enhance the varietal characteristics of Falanghina.
