Pouilly-Fumé Bourghier is a high quality white wine from the Loire region of France. More precisely, it is produced in the appellation d'origine contrôlée (AOC) of Pouilly-Fumé, an area renowned for its Sauvignon Blanc. Harvesting is carried out manually or mechanically, depending on the producer's traditions and climatic conditions. The optimal time for the harvest is crucial for obtaining a balanced wine. The grapes are destemmed, i.e. stripped of their stems, and crushed to extract the must. This is done gently to avoid extracting unwanted tannins. After fermentation, the wine is aged in stainless steel vats for a variable period, usually from a few months to a year. Finally, the wine is bottled and left to rest in the bottle for a few months before being marketed.
