This is a white wine produced by the Antica Hirpinia winery, located in the Irpinia region of Campania. As the name suggests, this wine is made from 100 % Coda di Volpe grapes, an indigenous variety of the area. The grapes grow in an area with particular soil and climate characteristics, which give the wine a unique personality. Harvesting is done manually, selecting only the best and healthiest grapes. This makes it possible to obtain a high quality must, rich in aromas and flavours. The grapes are destemmed and gently crushed to separate the must from the skins and seeds. The must is transferred into steel vats, where alcoholic fermentation takes place. This stage is crucial for transforming the sugars in the must into alcohol and carbon dioxide. The temperature is carefully controlled to preserve the fruity and floral aromas of the wine. Depending on the style of wine to be made, a short maceration on the skins can be carried out, which gives the wine more structure and complexity. After fermentation, the wine is matured in steel or partly in wood (barriques or tonneaux). The choice of container depends on the style of wine and the winery. Ageing in steel preserves the wine's freshness and minerality, while ageing in wood adds spicy and toasted notes. Finally, the wine is bottled and left to rest for a few months before being marketed.
