Fiano di Avellino Antica Hirpinia is an Italian white wine of great quality, produced in the Campania region, more precisely in the Irpinia area. It is produced exclusively from Fiano grapes, an indigenous variety of the area, cultivated on volcanic soils that give the wine a unique minerality. The vinification of Fiano di Avellino Antica Hirpinia is a careful process that respects local traditions and aims to enhance the unique characteristics of this vine and the terroir of Irpinia. The harvest is carried out manually, selecting only the best and perfectly ripe grapes. This step is fundamental to guarantee the quality of the grapes and, consequently, of the final wine. The grapes are destemmed and gently crushed to separate the must from the skins and seeds. The must is fermented in temperature-controlled stainless steel tanks. This stage is crucial for the transformation of sugars into alcohol and for the development of the wine's primary aromas. After fermentation, the wine is aged in stainless steel or wooden barrels for a variable period depending on the style desired. This phase allows the wine to refine and develop greater aromatic complexity. Finally, the wine is bottled and left to rest in the bottle for a few months before being marketed.
