Côtes de Provence, a controlled designation of origin that guarantees the high quality of the product. The grapes, usually Vermentino, are harvested manually to select only the healthiest and ripest bunches. This practice ensures greater control over the quality of the grapes that will go into wine-making. After harvesting, the bunches are destemmed, i.e. separated from the stems. This operation serves to prevent the tannins in the stems from imparting bitter notes to the wine. The grapes are gently pressed using pneumatic presses to extract the must flower, the most valuable part of the grape juice. This is done at low temperatures to preserve the fruity and floral aromas. The must is transferred into stainless steel vats where alcoholic fermentation takes place at controlled temperatures, usually between 15°C and 18°C. This practice preserves the freshness and acidity of the wine. Maturation usually takes place in stainless steel vats to preserve the freshness and varietal expression of the grapes. Provençal white wines, such as Manon, are often bottled early to maintain their youth and freshness.
