Gewurztraminer Les Roches 2023 is a white wine produced by Gruss, a renowned producer in Alsace. It is made from 100% Gewürztraminer grapes from vineyards located in the Grand Cru 'Les Roches' in Eguisheim, characterised by limestone-marly soils.
The Gewürztraminer grapes for Gruss' Gewurztraminer Les Roches 2023 are harvested by hand when fully ripe, usually towards the end of September or beginning of October. The exact date of the harvest varies depending on the vintage and weather conditions. The grapes are gently pressed to extract the juice, the must. Soft pressing is important to avoid extracting too many phenolic compounds from the skin, which could give the wine a bitter taste. The must is then statically decanted cold for a short period to settle heavy impurities. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. The fermentation temperature is typically kept between 15°C and 20°C to preserve the aromatic aromas typical of Gewürztraminer. At the end of fermentation, the wine is matured on the fine lees for several months. The fine lees are the residual yeasts that contributed to the fermentation and can give the wine additional complexity and structure. After maturing, the wine is filtered, stabilised and bottled.
