The production of Francesco Galliano is a process that requires care and attention The Chardonnay grapes are harvested manually, selecting only the healthiest and ripest bunches. The grapes undergo a soft pressing to extract the must flower, the most valuable part of the grape juice. The must obtained is fermented in temperature-controlled stainless steel tanks. This phase is crucial to preserve the freshness and aromaticity of the grapes. After fermentation, the base wine is aged in stainless steel for a variable period, depending on the vintage and the winemaker's choices. This allows the wine to stabilise and acquire greater complexity. At this stage, the winemaker selects the best parts from different tanks to create a harmonious and balanced blend. The wine is bottled together with a small amount of sugar and selected yeasts. In the bottle, re-fermentation takes place, giving rise to the characteristic mousse of the classic method. The bottles are matured on the lees for at least 32 months. During this period, the wine develops its typical organoleptic characteristics, acquiring finesse, complexity and a fine, persistent perlage. Prior to marketing, the bottles undergo remuage, a manual process that consists of placing the bottles upside down on racks in order to allow the lees to slide towards the neck of the bottle.
