Borgo Maragliano's Cha Pi Rosè is a wine that stands out for its freshness and natural froth. The vinification process, which follows the ancestral method, contributes significantly to the unique characteristics of this wine. The Chardonnay and Pinot Noir grapes, the two varieties that make up the blend, are harvested by hand at the moment of perfect ripeness. This careful selection is essential to guarantee the quality of the grapes and, consequently, of the final wine. The grapes undergo a soft pressing to extract the must flower, the most valuable part of the grape juice. This is done gently to avoid extracting tannins and bitter substances from the skin. The flower must thus obtained ferments spontaneously, i.e. without the addition of selected yeasts. This choice allows the indigenous yeasts present on the grapes to best express the characteristics of the terroir. Following fermentation, the two base wines (Chardonnay and Pinot Noir) are blended in precise proportions to obtain the final blend. The wine is bottled early, before alcoholic fermentation is complete. After bottling, the wine matures on the lees for a variable period, during which it is enriched with aromas and refined. Cha Pi Rosé is neither filtered nor clarified, in order to preserve its natural complexity and vivacity.
