Borgo Maragliano's ‘Giovanni Galliano’ is a classic method rosé sparkling wine distinguished by its elegance and freshness. Borgo Maragliano does not publicly reveal the exact length of ageing of Giovanni Galliano, as this is a jealously guarded production secret. The Pinot Noir grapes, typical for the production of this sparkling wine, are harvested manually to select only the healthiest and ripest bunches. The must obtained from the pressing ferments in steel at low temperatures to preserve the fruity aromas and freshness. After fermentation, the cuvée is created, i.e. the blending of different wine bases from different vintages. This operation results in a more complex and regular sparkling wine. The cuvée is bottled together with a small amount of yeast and sugar. Re-fermentation takes place in the bottle, which generates the sparkling wine's characteristic effervescence. The bottles are placed in special cellars, where they remain for several months or even years in contact with the yeasts. During this period, the wine acquires aromatic complexity and finesse.
