Conegliano Valdobbiadene Prosecco Superiore Brut 2021

In addition to being vintage, this Prosecco belongs to the Brut type: thinner but decidedly dry with evident acidity. This gives it a refreshing character and can be perfectly paired with meals. It is produced with only Glera grapes carefully selected from vineyards in the Conegliano Valdobbiadene DOCG area, that is the hilly area with sloping vineyards, well exposed to the sun and well drained. A prolonged stop on the lees in autoclave gives it fullness and harmony.

The harvest is manual and the vinification is separated vineyard by vineyard. After pressing the grapes, the free-run must ferments in stainless steel vats at a controlled temperature with selected yeasts. The cuvée is then created, that is the blend of the different base wines, yeasts and sugar are added for the second fermentation in an autoclave according to the Charmat method. The sparkling wine remains in contact with the lees in the autoclave for 90 days before being bottled.
