Conegliano Valdobbiadene Prosecco Superiore Extra Dry 2020
It comes from hillside vineyards in the Conegliano Valdobbiadene DOCG area. The vineyards are located at between 150 and 200 meters above sea level and have a very draining clayey and limestone soil thanks to the slope. The favorable southern exposure allows perfect ripening of the grapes, which results in tasty and intense wines, albeit with a low alcohol content. However, it is a vintage Prosecco, produced with grapes from the current harvest, hand-selected by a team of expert grape harvesters. Biancavigna produces only quality Prosecco with attention to every stage of production and above all trying to transfer the natural characteristics of the territory of origin of the grapes into the wine.
The harvest is manual. The grapes are gently pressed and the free-run must is left to clarify by natural decantation. Alcoholic fermentation takes place in steel vats at a low temperature with selected yeasts. The second fermentation takes place in an autoclave with the addition of sugars and yeasts. The sparkling wine remains in an autoclave in contact with the yeasts for at least 60 days.
