The Borgo Maragliano Chardonnay Brut follows a traditional production method, with some particularities that give the wine its distinctive character. Harvesting generally takes place in mid-September, when the Chardonnay grapes reach optimal ripeness. The grapes are carefully selected by hand to ensure the highest quality of the final product. The grapes are gently pressed to obtain the must flower, the noblest part of the grape juice, rich in aromas and sugars. The must is fermented at a controlled temperature to bring out the fruity and floral aromas typical of Chardonnay. Fermentation takes place in stainless steel tanks, which preserve the freshness and cleanliness of the wine. Chardonnay Brut Borgo Maragliano is made sparkling according to the Martinotti (or Charmat) method, a faster method than the classic method. The base wine is transferred into an autoclave, where sugar and selected yeasts are added. This starts the re-fermentation process that produces the carbon dioxide responsible for the froth. The wine matures on the fine lees for a period of about 8 months, acquiring complexity and finesse. After maturation, the wine is filtered and bottled, ready to be marketed.
