Castel del Monte Chardonnay Pietrabianca 2021 (magnum)
Pietrabianca is an Apulian white based on Chardonnay from Tormaresca’s Tenuta Bocca di Lupo. The grapes come from the Murgia plateau, which has arid karst soil; moreover this place is conditioned by winds blowing from the Ionian Sea and the Adriatic Sea. In these conditions, despite the southern latitude, the wines have a fresh, almost Nordic character. So is Pietrabianca, fresh and mineral, but with the fruity aromas that only the southern sun can infuse. The addition of a small part of Fiano contributes with good acidity to the final result.
The grapes of the two varieties are harvested and processed separately. After soft pressing, the Chardonnay must ferments in new French and Hungarian oak barriques. The wine also carries out malolactic fermentation and ages in barriques on the fine lees. The Fiano instead is fermented in steel, at a temperature of 16 ° C, in order to enhance the notes of freshness and acidity.
