100% Pinot Noir, from south-facing vineyards at about 300 meters above sea level. Harvesting is by hand; after a light pressing and a brief 48-hour cold maceration, alcoholic fermentation begins. This lasts for 6 days, with brief pumping over and periodic punching down. After that, the wine is separated from the skins and finishes fermentation in steel tanks, where aging ends.
