Amarone della Valpolicella Classico 2018
This Amarone comes from the village of Sant’Ambrogio in the Valpolicella Classica (“classica” means the oldest and original wine district). The area of Sant’Ambrogio in Valpolicella is characterized by small valleys with sloping vineyards that face south. The soil is mainly calcareous and gives personality to the wines. In particular, the Zenato vineyards are located at medium altitude, between 300 and 350 m above sea level; the vines are almost 20 years old.
After the manual harvest, grapes are laid out in suitably spaced boxes and left to dry in a loft for a period of 3-4 months. Grapes lose half of their weight due to the evaporation of water and all other substances concentrate: sugars, acids, polyphenols, tannins. Furthermore, some transformations occur and originate characteristic aromas and softness. The must obtained from the dried grapes is dense and ferments slowly with a maceration that does not exceed 20 days. The wine ages in oak barrels for at least 3 years.
