Acquavite is a generic term to describe spirits distilled from grapes. In Italy, however, there is an important difference: the spirit distilled exclusively from pomace (usually left over from the production of wine) is called Grappa, and it is a typical product. Acquavite d’uva, on the other hand, is the distillate of fermented grape must (containing both solid and liquid parts). But the term acquavite is also used to describe a spirit distilled from pomace produced outside of Italy, such as Marc de Champagne. So, when is this spirit served? It is generally served cool as a memorable conclusion to a convivial meal with all the trimmings among friends and relatives. It’s an absolute must during the festive season! In Italy the success of Acquavite d’uva is attributable to the innovative products of the Bonaventura Maschio distillery called Prime Uve.
