The pears are harvested when ripe and distilled while still fresh using a discontinuous distillation process in steam stills.
Distillation takes place slowly to preserve the organoleptic qualities of the fruit. The distillate rests six months in steel containers and matures for two years in Limousin 3026 oak barrels.
This spirit is characterized by the sweet and strong taste of Williams pears, also enriched by notes of pastry and candied fruit.
