Valpolicella Classico Superiore Sant’Urbano 2020 BIO
Valpolicella Superiore DOC is the traditional appellation of evolved wines from Valpolicella, based on Corvina or Corvinone, aged in wood. That of Speri is one of the most renowned Valpolicella Superiore; it is an elegant and complex wine, coming from the classic area, or the original one; in particular, the grapes are all grown on a suitable vineyard in the village of Fumane, which is Monte Sant’Urbano. The vineyard is located on the top of a hill between 280 and 350 meters above sea level where the soils have an important limestone component.
After the harvest the grapes are left to dry for 20-25 days, in order to concentrate sugars and other substances responsible for a greater richness in taste. The slightly dried grapes ferment then with maceration on the skins for 10 days. After racking, the wine undergoes malolactic fermentation in concrete tanks and ages for two years in 500 l French oak tonneau.
