Trentodoc Pas Dosé 2018
The Trentdoc Pas Dosé Altemasi sparkling wine has an essential, dry, taut taste and is rich in fragrant aromas thanks also to a long aging on the lees. The grapes come from vineyards at an altitude between 400 and 650 meters in various valleys of Trentino. The mountain environment characterizes the climate of the region with cool nights and continuous ventilation, so that the grapes ripen healthy while retaining acidity and accumulating flavor compounds in the skin. All this favors the elegant character of the wine.
The grapes are pressed in whole bunches and the liquid juice ferments in stainless steel vats at a controlled temperature for the creation of the base wines. These are blended in the cuvée, sugars and yeasts are added for the second fermentation which takes place in the bottle according to the traditional method. The sparkling wine ages on the lees for at least 3 years before disgorgement and is not dosed.
