Timo Vermentino 2021
A wine that already from the name recalls the essence of the Mediterranean scrub that grows on the dunes of the coasts. Made only with Vermentino grapes, it combines the scents of white flowers with a strong marine note. Fresh wine that prefers fish pairings. The grapes that grow at 100 m above sea level and a short distance from the coast are harvested at the end of August, then de-stemmed and kept in contact with the skins for a few hours in cold before pressing, so as to extract the maximum aromatic potential from the skins. Fermentation takes place in steel at 15°C for 13-15 days, preserving the intact bouquet and natural aromatic profile of the grapes.
