Scaia Corvina 2021
Scaia Corvina is a modern, youthful wine, based on the most important grape of Valpolicella expressed in purity. Corvina is grown in the vineyards of Tenuta Sant’Antonio in eastern Valpolicella in two different villages between 200 and 300 m above sea level. In particular in the village of Colognola ai Colli there is an important layer of gravel in the subsoil, while in the village of Mezzane di Sotto the soil is sandy and silty with limestone flakes. Corvina acquires with finesse here and maintains its acidity, ideal for the young and lively typology of the Scaia project.
The grapes are de-stemmed and the berries are subjected to a cold maceration for 24 hours in order to favor the extraction of color and aromas, but not tannins. The alcoholic fermentation followed by the malolactic fermentation are carried out in steel vats at a low temperature. The wine remains in steel until bottling.
