Spumante Trento DOC 1673 Noir Nature
The bunches of Pinot Noir, which are perfectly ripe for the production of sparkling wines, are harvested by hand into small containers and promptly brought to the cellar where they are pressed whole in the marmonier press.
The different selections of Pinot Noir mature on their lees and some batches undergo malolactic fermentation.
Before the summer, the wine is bottled and it is in these bottles that the second fermentation will take place, as required by the Metodo Classico. The wine matures on the lees in the bottle for 48 months, after which the dégorgement takes place.
The wine remains another 3 months in the bottle before being released into the market.
The nose shows a bouquet of small red fruits, balanced by stronger and more complex hints of spice.
In the mouth it is creamy, with a savoury persistence.
The perlage is lively and persistent, with small, dense bubbles that close the sip decisively.
