Soave 2020
Allegrini’s Soave is a very classic white wine, with a fresh and savory taste with medium structure, suitable both to accompany aperitifs and fish appetizers and vegetarian dishes. It is produced with the local Garganega variety and a touch of Chardonnay, which completes its aromatic profile with fruity and floral notes. The Soave production area is characterized by a mild climate and above all by a calcareous soil with basaltic elements due to the volcanic origin of the subsoil. The vineyards are located in Mezzane on hills between 150 and 250 meters above sea level with southwest exposure.
The grapes are harvested by hand in late September, early October. They are crushed and left to cold macerate for 18 hours in order to facilitate the extraction of aromatic compounds from the grape skin. The free-run must then ferments in steel vats at a controlled temperature and the wine ages in steel for 4 months before being bottled.
