Rocca delle Penne is a red wine that celebrates Ormeasco, an indigenous Ligurian grape variety. This winery, located in a privileged position, manages to capture the essence of the Ligurian terroir, creating authentic wines rich in personality. The grapes are harvested manually, selecting only the healthiest and ripest bunches. This makes it possible to obtain high quality grapes and to preserve the integrity of the fruit. The grapes are destemmed and gently crushed to separate the must from the skins and seeds. The must obtained is fermented in temperature-controlled stainless steel tanks. This phase is fundamental for the transformation of sugars into alcohol and for the development of the wine's characteristic aromas. During fermentation, the skins remain in contact with the must for a variable period, depending on the vintage and the desired characteristics. Maceration allows the colours, tannins and aromas to be extracted from the grape skins. After fermentation, the wine is aged in stainless steel tanks or wooden barrels for a variable period. This phase allows the wine to soften and develop greater aromatic complexity. Finally, the wine is bottled and left to rest in the bottle for a few months before being marketed.
