The Cian di Previ produced by Poggio dei Gorleri is a red wine that authentically expresses the character of the Granaccia grape variety and the Ligurian terroir. Thanks to its elegance and its ability to best represent the characteristics of the terroir, this wine has earned a prominent place on the Italian wine scene. The Granaccia grapes are harvested exclusively by hand, selecting only the healthiest and ripest bunches. This operation, although laborious, is essential to guarantee the quality of the grapes and, consequently, of the final wine. The must thus obtained is macerated with the skins for a period of time that varies depending on the vintage and the style of wine to be made. During maceration, the colouring substances, tannins and aromas pass from the skins to the must, giving the wine its structure and complexity. Alcoholic fermentation takes place in stainless steel tanks, with frequent pumping over and punching down to extract the colouring and aromatic substances as best as possible. At the end of fermentation, the wine is aged in stainless steel tanks or in wooden barrels for a variable period depending on the vintage. Ageing in wood gives the wine spicy and vanilla notes, while ageing in steel preserves its freshness and fruitiness. Finally, the wine is bottled and left to rest in the bottle for a few months before being marketed.
