Quattro Vicariati 2019 Trentino Superiore DOC
The wine is a Bordeaux-cut red, 70 percent Cabernet Sauvignon with Cabernet Franc supplementation and 30 percent Merlot. The vines are trained on Guyot and simple pergola systems along the slopes of the Adige River; the soil is mainly clay-limestone and has excellent sun exposure. The area of the vines is the Quattro Vicariati area between the municipalities of Ala, Avio, Brentonico and Mori, in Vallagarina; the name of the wine was chosen precisely to pay homage to this land.
The grapes are harvested by hand and are macerated in contact with the skins for about 14 days in temperature-controlled steel containers. After fermentation, the wine is aged in barriques and small oak barrels for 18 months, is bottled and aged further in bottles for about 10 months before being released.
The end result is a savory, smooth, balanced and harmonious wine with perfectly integrated tannins; it always lets you drink it with great pleasure and is never banal, not by chance it is one of the top labels of the Cavit winery.
