Pinot Nero dell’Oltrepò Pavese Carillo 2020
Carillo is the simplest Pinot Noir in the Frecciarossa range; it expresses the varietal purity with no contamination of wood-aging; it is fresh and fruity, delicate in structure suitable for light dishes such as cold cuts or served at a low temperature, it can also match tasty fish dishes such as stewed dogfish or baked turbot. The Pinot Noir grapes come from various vineyards between 100 and 200 meters above sea level in the Casteggio area in Oltrepò Pavese; the soil of the vineyards is made up of clay and limestone, suitable for the cultivation of Pinot Noir. Pinot Noir Carillo was produced for the first time with the 2014 harvest and since then it has impressed consumers every time and has also had excellent reviews such as that of Slow Wine which elected it a great daily wine (2018 vintage) or that of Berebene which awarded it the Oscar for the quality / price ratio (2015 vintage).
The harvest is manual. The de-stemmed grapes ferment in stainless steel vats at a controlled temperature with a maceration of 8 days. The wine undergoes malolactic fermentation and ages in steel for about a year. Only before bottling is it sometimes left to age in large oak barrels for 2-3 months.
