This wine authentically reflects the characteristics of the Chablis terroir, offering a pure and genuine taste experience. The grapes are harvested by hand to select only healthy, ripe bunches. This manual selection is essential to guarantee the quality of the final wine. The grapes are gently pressed to extract the must without damaging the skins. The must obtained is fermented in temperature-controlled stainless steel vats. The use of stainless steel preserves the freshness of the wine and avoids undesirable influences from wood.  After fermentation, the wine always matures in stainless steel vats. This choice is in line with the fresh and mineral style that characterises Petit Chablis. Finally, the wine is bottled and left to rest for several months before being marketed.
